			<content:encoded><![CDATA[<p>Here is how I made this stuff:</p>
<p>In a frying pan heat 2 Tbsp oil or butter<br />
Add 2 cups instant brown rice, cook like &#8216;rice-a-roni&#8217; over medium-high heat until it starts to look browner. I also added a cube of tomato- chicken bullion. </p>
<p>Then add 1 can of tomatoes with chilies in it.<br />
Add two cans full of water.<br />
Lower heat to a simmer (low).<br />
Simmer for 15-20 minutes until water is absorbed.<br />
Season with salt and pepper. </p>

			<content:encoded><![CDATA[<p>This is another dinner idea that I learned from the nutrition class we are taking. The kids made their own. I told them they had to have some vegetables (spinach) on it too. Making this on roll dough helps with portion control. I measured out the cheese so everyone had the same amount. </p>
<p>Rhodes wheat rolls- 2 per person or 1 fir smaller kids is plenty. Defrost rolls for about 4 hours on cookie sheet sprayed with a little oil. Spread dough into circles. It is best to just pull the dough rather than rolling it around and then trying to form your crust.<br />
Pizza sauce<br />
Cooked chicken sliced<br />
Fresh spinach leaves<br />
Part skim mozzarella cheese -I used 1/3 cup per pizza<br />
Diced red onion<br />
Olives<br />
Sprinkle with parmasean cheese</p>
<p>Bake at 350 for 15-20 minutes until dough is golden and not doughy.<br />
Enjoy! </p>

And vegetables add stirggnfry sauce as much as desired. Serve over rice.<br />

<p>Yogurt any flavor &#8211; vanilla, strawberry lemon are the ones my girls like to use<br />
Berries- blueberries, raspberries, etc. again choose what you like. You can even use frozen mixed berries<br />
Walnut pieces<br />
Graham crackers- crushed on top</p>

			<content:encoded><![CDATA[<p>These were the best egg rolls I have made. I think it was the sausage that gave it the good flavor. Normaly I just use some pork and try to chop it up to look like it does in real Chinese egg rolls. I had extra &#8216;stuffing&#8217; so I made a few rolls out of spinach tortillas and fried then up also, my kids said they were good but I got full before I could try one!<br />
Here you go:</p>
<p>You will need:<br />
1 chub Farmland pork and bacon sausage<br />
One package Chinese egg roll sheets<br />
1/2 head Cabbage<br />
1/2 head Purple cabbage, or maybe 1/4 mine was a little bigger than a softball<br />
4 Carrots<br />
4 stalks green onion<br />
About 1 Tbsp. Sesame oil<br />
1 inch piece Ginger<br />
Salt, white pepper<br />
1 egg, beaten add a little water if too thick (1Tbsp) to seal rolls<br />
Oil for frying<br />
Dipping sauce, I had teriyaki sauce so that&#8217;s what we used</p>
<p>Cook sausage and crumble it up while cooking. Drain grease.<br />
Chop up of a cabbages, carrots, and green onion, use more or less depending in your needs and taste.<br />
Add vegetables to pan with sausage grate ginger and add sesame oil, salt and pepper to taste.<br />
Cook stuffing until heated through.<br />
Start rolling out the egg rolls, and seal with egg.<br />
Heat oil on medium and fry rolls until golden brown.<br />
Dip in sauce and enjoy. </p>
<p>&#8216;How to roll egg rolls&#8217; are normally on the back of the egg roll sheet package. But if not I&#8217;ll try to explain here:<br />
Place sheet so that a corner, is pointing toward you. A corner should be at 12 o&#8217;clock, 3 o&#8217;clock, 6 o&#8217;clock, and 9 o&#8217;clock. Put a few Tbsps stuffing between 3 o&#8217;clock and 9 o&#8217;clock. Grab the 6 o&#8217;clock corner pull up past stuffing  and sort of roll it under the filling while keeping filling inside. Grab 3 and 9 o&#8217;clock and pull them tightly to the middle. Brush the 12 o&#8217;clock corner with egg. Now tightly continue to roll up the egg roll over the 12 o&#8217;clock corner. And you should now have a egg roll ready to fry!    </p>

			<content:encoded><![CDATA[<p>My children and I stopped by the produce market today and I let them pick the fruits and veggies they wanted. One of them picked a nice big eggplant and some tomatoes. Those two veggies became our dinner: I started our by sautéing half the eggplant in olive oil, I sliced it then cut the slices into fourths. Then I deceided to throw in some chopped onion, I used about 1/4 of a yellow onion. I cut up four tomatoes and threw it in with the eggplant, I then made a bad choice and smelled the food, it smelt like manure. Then my daughter came along and smelt it too, but I continued on my cooking, it was getting late. I added a can of tomato sauce and cut up mozzarella cheese then seasoned it with salt, pepper, and basil. We ate it over penne pasta and it was a lot better than it smelt! I don&#8217;t know why the eggplant smelt like stink, but it sure did. The kids asked if we could go back to the market tomorrow, whatever gets them to eat healthier!    </p>

<p>Feeds about 5 people, easily add more or less if needed.<br />
1/2 pkg. Bacon, cut up cooked<br />
In bacon pan keep about 1-2 Tbsp grease, tear or cut 8-10 corn tortillas into pieces ( not too small, I break into 1/4 then a little smaller) cook tortillas on med-med high for about 7 minutes.<br />
Add a dozen eggs and scramble. Cook through. Salt &amp; pepper to taste. I eat mine with cheese and ketchup.<br />
* you can also use sausage instead of bacon or no meat. Try with salsa or hot sauce. Enjoy  </p>

<p>1 egg<br />
1 Tbsp. Water<br />
1 sheet frozen puff pastry, thawed (1/2 pkg.)<br />
1/4 cup Parmesan cheese*<br />
1/4 tsp. Cayenne pepper*<br />
Deli/lunch meat*<br />
4 slices bacon, crumbled</p>
<p>Unfold pastry sheet on lightly floured surface. With rolling pin, roll into a 14X10&#8243; rectangle; cut in half lengthwise.<br />
Beat egg &amp; water; brush both pastry halves with egg mixture.<br />
Sprinkle some cheese &amp; pepper then cover with ham slices, *I don&#8217;t really measure these, and bacon on one of the pastry pieces.  For extra tastiness I splash a little bacon grease on top of ham.<br />
Place 2nd sheet on top, egg side down. Roll gently with rolling pin to seal. Brush with egg mixture.<br />
Roll tightly to form a 14&#8243; log. Cut 24 slices. Place on a well greased baking sheet.<br />
Brush slices with egg mixture. Sprinkle with more cheese.<br />
Bake 400* 12-14 min. Enjoy!</p>
