Chicken & Black Bean Quesadillas

What you need:
2 chicken breasts
1/2 pkg bacon
1 can black beans rinse, drain
Tortillas
Salsa
Cheese I like cheddar or Colby Jack
Cook bacon, set aside. Save grease it’s always good to cook with later.
In same pan with a little bit if the bacon grease cook chicken, shred or cut up.
Heat iron skillet or griddle to med-high, you can just use microwave but you won’t get a crispy, browned tortilla.
Cover half of tortilla with chicken, bacon, beans, and shredded cheese. Fold in half, or cover a whole tortilla and place another whole one on top. It’s easier to flip when you fold in half.
Cook until cheese is melted. For added crispyness you can butter outsides of tortilla before cooking.
Serve with salsa or ranch. Enjoy!
